Roasted Strawberry Matcha Latte

Another Bay Area classic, the strawberry matcha latte. This drink was popularized by Boba Guys and has gained widespread popularity over the years as numerous boba shops started to offer this item on their menus. This recipe ups the flavor profile of the strawberries by roasting them in the oven before pureeing.


It’s an extra step in the process and it isn’t entirely necessary for a great tasting drink (if you want to go ahead and skip the roasting, that’s entirely fine), but it provides a depth of flavor that would go missed otherwise. The roasting process draws out and intensifies more of the strawberries’ juices, resulting in a stronger flavored strawberry matcha latte.

This recipe is great for when strawberries aren’t in season because the whole idea of roasting them in the oven is meant to bring out their natural sweetness and flavor, no matter the season! The roasted strawberries can then be used as a sauce or topping for numerous other desserts if wanted.

The matcha latte itself provides an great earthy flavor, but the addition of the roasted strawberry puree brightens up the entire drink. It introduces some needed acidity and sweetness to round out and complement the earthy tones of the matcha.

Ingredients

Roasted Strawberry Puree

  • 1 pound of cut and stemmed strawberries
  • 1/2 cup sugar
  • 3/4 cup water

Matcha Latte

  • 1.5 teaspoons matcha powder
  • 3 tablespoons warm water
  • 3/4 cups milk
  • 1/4 cup roasted strawberry puree

Instructions

Roasted Strawberry Puree

  1. Preheat oven to 400°F.
  2. Mix the cut and stemmed strawberries with the sugar and leave out in a bowl for 30 minutes.
  3. Transfer the mixture to a baking dish and leave uncovered in the oven for 20 minutes.
  4. Take the pan out of the oven and leave until cool.
  5. Transfer the cooled mixture to a blender, add the water, and blend until smooth.
  6. The strawberry puree can be transferred to a container with a lid and left in the fridge for other matcha latte occasions!

Matcha Latte

  1. Put the matcha powder and hot water in a small container with a lid.
  2. Shake vigorously until the entire mixture is well combined and there's no large, visible lumps in the container.
  3. Take 1/4 cup of the strawberry puree and pour into the bottom of a glass.
  4. Then carefully pour the 3/4 cup of cold milk on top of it.
  5. Add ice to liking on top of the milk
  6. Then pour the liquid matcha mixture on top of the ice (hitting the ice with the matcha mixture ensures that you'll achieve noticeable layers in your end drink!)
