Black Sesame Pound Cake with Kinako Streusel

Pound cakes are an incredibly old cake, with some recipes dating back to the 1700s! It’s traditionally made using just 4 ingredients: flour, butter, eggs, and sugar and is called a pound cake because these recipes usually called for a pound of each ingredient! Pound cakes have since evolved over time with the recipe being adapted to fit a different country’s regional style, but pound cakes still remain as one of my favorite bakes.

I’ve always had a love for pound cake and can without a doubt say that my favorite comes in the form of the Sara Lee brand sold in grocery stores across the nation. It’s incredibly dense and buttery, packed full of flavor, and always easy to find in the refrigerated section at my local grocery store.

I’ve never actually seen any flavored pound cakes sold at my local grocery store (maybe its just because my eyes automatically go towards the Sara Lee one), so I decided to change it up and add my own Asian twist to this traditional cake!

I started off with the King Arthur pound cake recipe for my base and then incorporated some black sesame paste into the batter to give it a more savory, roasted flavor. Pound cakes are usually pretty one dimensional in terms of flavor so I decided to add a kinako flavored streusel on top to give the cake some more crunch.

Kinako is a roasted soy bean powder that’s traditionally used in Japanese cuisine. It also features savory and roasted notes to it that, I personally found, to really complement the flavor that black sesame imparts to a bake. This pound cake is dense and moist, perfect for an afternoon snack or morning breakfast item, but is still rich and buttery so a thin slice will definitely go a long way!

Ingredients

Kinako Streusel

1/2 cup light brown sugar
1/4 cup unsalted butter (4 tbsp)
1/2 cup all purpose flour
1 tbsp kinako powder

Black Sesame Pound Cake

2 cups all purpose flour
1 cup granulate sugar
4 large eggs
1/2 cup whole milk
1 and 1/2 tsp baking powder
1 cup unsalted butter (16 tbsp)
2 tbsp black sesame paste
pinch of salt

Instructions

Kinako Streusel

In a small bowl, combine the flour, brown sugar, and kinako powder
Cube up the butter and add to the dry ingredients above
Cut in the butter with a pastry cutter or fork until small pea sized shapes are created
Then set aside

Black Sesame Pound Cake

Preheat the over to 350F and line a 9in x 5in loaf pan
In a small bowl, sift together the flour, baking powder, and salt
In a large bowl, beat together the butter and sugar with a mixer until light and fluffy
With the mixer set on low, slowly add in each egg until all are well combined
Add in the black sesame paste and mix to combine
With the mixer on medium low, alternately incorporate the milk and dry ingredients, ending with the dry ingredients
Pour the batter into the prepared loaf pan and smooth out the top
Pour the kinako streusel over the top of the pound cake and lightly press it into the batter
Bake for 60-65 minutes, or until an inserted toothpick comes out clean
Remove from the oven and allow to cool in the pan for 5 minutes
Then remove from the pan and allow for it to cool fully on a wired rack

Could I make this recipe and bake it in a Bundt pan? Or would I need to multiply the recipe?

Dahlia – I believe a bundt pan is equivalent to (2) 9×5 pans.

Made it, and it’s delicious, but it’s nowhere near as dark as the photos show. I even added extra sesame paste to the recipe when I saw how light the batter was (which wasn’t surprising given the little amount of black sesame in the recipe. Did you add extra to your recipe?

This looks awesome. Is the black sesame paste you use homemade? Is it the type of paste for Chinese dessert, which you just add hot water?
