These cookies have such a strong matcha flavor and they go so well with the bits and pieces of crushed strawberries in the cookie. The cookies themselves are slightly sweet and oh so chewy and moist in the middle!

It’s important to not overbake these cookies as they will definitely harden up as they cool. I’ve found that it’s best to underbake them by a little, when they’ve just barely started to crisp up on the sides, but are still soft in the middle. This ensures that they remain soft even when stored in a lidded containers for the next few days!

Ingredients

  • 2 cups all purpose flour
  • 1.5 tablespoons matcha powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dark brown sugar
  • 1/2 cup granulate sugar
  • 3/4 cup melted butter
  • 1 tablespoon vanilla extract
  • 1 large egg (room temperature)
  • 1 cup white chocolate chips
  • 1 cup crushed freeze dried strawberries

Instructions

  1. Preheat over to 325F
  2. In a small bowl, pour in the matcha powder, flour, baking soda and salt
  3. In a large bowl, pour in the melted butter, brown sugar, and granulated sugar and mix together until it is thick and well combined
  4. Then add in the egg to this butter sugar mixture and mix together until fully incorporated
  5. Incorporate the dry ingredients from the small bowl, into the wet ingredients in the large bowl in 1/3 increments and mix together until the dough is blended together 
  6. Fold in the white chocolate chips and freeze dried strawberries until everything is well combined
  7. Line a baking tray with parchment paper and place heaping tablespoons of the dough onto the tray, ensuring that each dough ball is at least 2-3 inches away from one another
  8. Bake the cookies for 15 minutes and cool on a wire rack before enjoying!
