Ever wanted an extremely light, but still chewy BAKED donut, spiked with a hint of miso? If you said yes (and even if you said no) I’m sure these donuts are perfect for you! They’re soft, but still retain a nice chew to them even as they cool down. These donuts also contain a good hint of white miso paste in both the batter and chocolate glaze in order to further enhance their flavor profile!

What type of miso should I use?

Generally, when baking with miso I’d recommend using white miso paste (as opposed to other varieties like red or yellow miso). White miso is milder in flavor and less pungent than the other varieties, so it tends to much more easily complement bolder flavors like chocolate or caramel. The salty, savoriness of the miso helps to enhance those flavors in much the same way that salt helps to enhance the flavors of salted caramel.

Of course, at the end of the day, any miso paste will work in a baked good as long as you know what flavor profile you’re going for. If you’re a beginner with experimenting with miso in desserts, I’d definitely recommend starting off with white miso paste first though!

Can I fry these donuts?

I would not recommend frying these donuts as this recipe is specifically for a baked donut. The batter is quite liquid so it’ll be hard to shape it into a donut shape for frying anyways.

Ingredients

Miso Mochi Donut

  • 7 tbsp melted butter
  • 2 large eggs
  • 1 and 3/4 cup whole milk
  • 2 tbsp white miso paste
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 and 1/4 cups mochiko
  • 2 tbsp baking powder
  • pinch of salt

Miso Chocolate Glaze

  • 1 cup powdered sugar
  • 5 tbsp milk
  • 1/4 cup dark chocolate
  • 1 tsp miso

Instructions

  1. Preheat the oven to 350F
  2. In a small bowl sift together the mochiko, baking powder, and salt
  3. In a medium bowl mix together the melted butter and white miso
  4. Then beat in the eggs, milk, granulated sugar, and brown sugar until fully combined
  5. Pour all the dry ingredients into the bowl of wet ingredients and mix them together
  6. Lightly grease the donut pan
  7. Pour the donut batter into each donut mold, filling until the rim
  8. Bake for 30 minutes
  9. Remove the pan from the oven and allow to cool for ~15 minute
  10. Then remove the donuts from the mold and allow to fully cool on a wire rack

Miso Chocolate Glaze

  1. In a small bowl, melt the dark chocolate and mix together with the miso paste
  2. Then pour in the milk until smooth
  3. Sift in the powdered sugar until fully combined
  4. Dip each donut in the glaze and allow to harden before enjoying!
