Hojicha Brownie Cookies

Brownie cookies have an incredibly fudgey, chewy texture and the crinkles and cracks across the front of them only add to their appeal. I took the classic brownie cookie and replaced the cocoa powder with hojicha powder instead.

For those who aren’t all the familiar with hojicha just yet, its basically the roasted form of matcha. It has a dark brown color and has an amazing roasty toasty flavor to it. It adds an amazing nutty flavor and can be easily incorporated into any bakes and can be a great substitute for wherever matcha is used!

The hojicha powder here helps these cookies not only deliver on their aesthetic appeal, but also on the flavor front as well. One bite of these fudgey cookies and you’ll easily grow to love hojicha as much as I do!

Ingredients

  • 1/2 cup white chocolate
  • 1/4 cup unsalted butter
  • 1/3 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1 large egg
  • 1/2 cup  and 1 tbsp all purpose flour
  • 1/2 tsp baking powder
  • 1 and 1/2 tbsp hojicha powder (I used this one from amazon and it's a bit lighter in color and flavor than other hojicha powder that I've used before, but I feel like its a pretty good price for the quality nonetheless, especially  if you're looking to ease your way into the world of hojicha)
  • pinch of salt
  • white sesame seeds (topping)

Instructions

  1. Preheat oven to 350F and line two baking trays with parchment paper
  2. In a small bowl, whisk together the flour, baking powder, hojicha powder, and salt
  3. In a microwave safe bowl, place the butter and white chocolate and microwave on high for 30 seconds
  4. Remove from microwave and stir the mixture a bit
  5. Return to the microwave and microwave on high for 30 seconds once again
  6. Then remove the bowl and stir until all of the chocolate chips have completely melted
  7. Return the chocolate butter mixture back to the microwave and microwave on high for another 15 seconds
  8. Remove and stir the chocolate mixture once again (make sure to whisk until the butter is fully incorporated in the melted chocolate and you have a thick chocolate paste; this may take a while. The butter should not be separated from the melted chocolate!)
  9. Then place the melted chocolate off to the side to allow it to cool a bit as you prepare the rest of the cookie batter
  10. In a large bowl, put in the egg and both sugars
  11. Using an electric mixer, whisk together the egg and sugars on medium high speed for 5 minutes (this time is important!)
  12. With the mixer still on, slowly pour in the chocolate butter mixture into the large bowl (if the butter has separated from the chocolate, whisk to combine once again before pouring over the eggs)
  13. Introduce half of the dry ingredients from the small bowl, into the large bowl with the mixer still on and just lightly mix for about 5 seconds
  14. Then pour the rest of the dry ingredients in and mix until the dry ingredients are well combined (about 15-20 seconds)
  15. Immediately start portioning out the cookie dough by placing a heaping tablespoon of cookie batter onto two lined baking trays (5 per tray)
  16. Top each cookie with a sprinkle of black sesame seeds
  17. Put both trays in the oven, on the same level, and bake for ~13 minutes
  18. Remove the trays from the oven and allow to cool for another 15 minutes before transferring to a wire rack, then enjoy!

Hi there, do I have to press down/flatten the cookie doughs or do I leave them rounded? (I use a cookie scoop) thanks in advance!! 🙂

I don’t press down the cookie dough that much when I make them (they’re at least not rounded). I’d say the dough more resembles a really thick puck if that makes sense haha and then they’ll spread when baking so just make sure to not flatten too much

I don’t exactly have a thermometer placed inside my oven. I just use the digital temperature that’s displayed on it!
