What is dulce de leche?

Dulce de leche is essentially a caramel sauce made from sweetened condensed milk and can be found in desserts widely throughout Latin America. It has a deep, luscious flavor to it and is incredibly rich and thick. You can spread it on toast, top it on ice cream, or just eat it straight out of the jar itself!

While there are many brands of condensed milk out there, I’m partial to the Longevity brand of condensed milk as I’ve found its resulting flavor of it to be more complex and rich. It yields a thicker dulce de leche that lends very well to turning into spreads or fillings.

How do I make dulce de leche?

There are usually 3 main methods that home cooks use to make dulce de leche. The first involves placing the sweetened condensed milk into a pot of water and boiling the can for a few hours until the sugars have properly caramelized. The second involves transferring the sweetened condensed milk to a baking tray, covering it, and then baking it in a water bath until the desired results are achieved. The last method, which I describe here, involves pressure cooking the sweetened condensed milk.

Using a pressure cooker to make dulce de leche is a really easy and fast way to make it! It only takes an hour to do so, when compared to the 2-3 hours of the other methods, and there’s no need to babysit the can as you cook it either.

Ingredients

  • 1, 14 ounce can of sweetened condensed milk
  • 1 tbsp hojicha powder
  • 1/4 tsp baking powder
  • 2 tbsp warm water
  • 1 cup water (for instant pot)

Instructions

  1. Transfer the sweetened condensed milk to a stainless steel bowl
  2. In a small bowl, combine the baking soda, hojicha powder, and warm water until a thick paste is formed
  3. Pour the paste into the bowl of condensed milk and mix until thoroughly combined
  4. Pour the cup of water into the instant pot
  5. Place the stainless steel bowl into the instant pot, on the water, and close the lid
  6. Cook on high pressure for 60 minutes
  7. If a thicker consistency is desired then cook for another 10-20 minutes, and if a looser consistency is desired then cook for 10-20 minutes less
