Calamansi Ube Bars

Lemon bars have always been some of my favorite baked goods because I love how sweet and tart they are! I decided to change up the classic lemon bar recipe this time around though and turned it into a calamansi bar instead! For those who aren’t too familiar with calamansi, its often known as a Philippine lime and tastes like a mix between an orange and a lime. It’s not too tart, but it’s not entirely sweet either!

For the crust, I wanted to borrow from another classic filipino flavor and made it ube flavored! The crust is basically a shortbread cookie recipe that, once baked, lends itself very well to holding up the thick calamansi curd on top of it.

Aside from the flavor combination, I feel like the two tone calamansi ube bars are pretty show stopping in their own right. A bright flash of yellow followed by a deep violet purple makes these calamansi ube bars all the more irresistible!

Ingredients

Ube Shortbread

  • 4 tablespoons softened, unsalted butter
  • 1/4 cup granulated sugar
  • 1 cup all purpose flour
  • 1.5 tbsp ube extract
  • pinch of salt

Calamansi Filling

  • 4 large eggs, room temp
  • 1.5 cups granulated sugar
  • 1 tbsp calamansi zest
  • 1/2 cup calamansi juice
  • 1/2 cup all purpose flour
  • powdered sugar for dusting

Instructions

Ube Shortbread

  1. Preheat oven to 350F
  2. Cream together the butter, sugar, and ube extract until light and fluffy
  3. Add the flour and salt and combine until the dough comes together
  4. Gather the dough into a ball and flatten it into a 9x9 baking pan, ensuring the dough touches all sides of the walls
  5. Refrigerate for 15 minutes
  6. Put the pan in the oven and bake for 15-20 minutes, or until the shortbread is just ever so slightly golden brown
  7. Leave the oven on for the next step

Calamansi Filling

  1. Whisk together the eggs, sugar, calamansi juice, calamansi zest, and flour all in one bowl
  2. Pour the mixture on top of the shortbread and bake for 30-35 minutes, or until the filling is set
  3. Remove from the oven and let the bars chill in the fridge for 30 minutes before trying to cut into them! (this helps to ensure that the filling is fully set)
  4. Lightly sprinkle some powdered sugar on them before serving 🙂
