Millionaires shortbread is a sweet treat consisting on a classic shortbread base, topped with a layer of chewy sweet caramel, and then covered with chocolate. This treat is a trifecta of textures with the crunch of the shortbread mixing with the chew of the caramel and the crisp snap of the chocolate top.
I wanted to add my own twist to this classic dessert and make it a little more asian. I started by creating a matcha shortbread crust. The shortbread is buttery, crisp, and lightly sweetened with the addition of matcha powder to help add some more earthy bitter tones to the overall shortbread and a nice pop of that beautiful green color!
I found that an entire layer of caramel might be a bit too sweet for many (especially asian parents like my own who prefer desserts to not be “too sweet”) so I created a miso caramel to help cut through the cloying taste of sugar. The addition of miso to the caramel adds a nice, almost salted caramel like flavor, to the entire millionaires shortbread that helps to elevate it to new heights.
The top is a layer of dark chocolate, cut by some lines of white chocolate to give the overall treat a beautiful swirled effect. It’s completely fine to cover with just dark chocolate, but I’d recommend not using pure white chocolate as it may add too much sugar to the mix.

This looks wonderful! One question—when you have “condensed milk” in the ingredients, does that refer to sweetened condensed milk or evaporated milk? Want to make sure I purchase the right ingredients.
