Ube Crinkle Cookies

I’ve always loved the look of crinkle cookies and the flavor of ube so I thought, why not try combining them? Not gonna lie, I love the texture of these cookies. The middle is soft and pillowy while the outside is just ever so slightly crisp. When first biting into the cookie, you’ll notice just how chewy it is! I’ve never had a cookie that matched this level of chewiness and softness before. These ube crinkle cookies are without a doubt a must try.

This recipe uses ube halaya, which is basically a Filipino jam made out of ube. I found this at my local Filipino grocery store and I feel like this is what gave the cookies that strong ube flavor and wonderful texture. I’d highly recommend trying to find some ube halaya (or making your own) for this recipe! (ube extract link can be found below!)

Ingredients

  • 1 large egg
  • 1/4cup vegetable oil
  • 1/2 teaspoon ube extract
  • 3/4 cup granulated sugar
  • 1/2 cup ube halaya
  • 1 cup all purpose flour
  • 1 and 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • powdered sugar for coating
 

Instructions

  1. In a large bowl combine together the oil, egg, ube extract, and sugar. Mix until well combined.
  2. Then add in the ube halaya into the large bowl and mix until combined.
  3. In a small bowl sift and mix together the flour, salt, and baking powder.
  4. Pour the dry ingredients from the small bowl into the large bowl and mix with a spatula to combine.
  5. Transfer the cookie dough to a small bowl and chill for anywhere from 30 minutes to overnight.
  6. Using a small ice cream scooper, portion out the dough into roughly 1 inch sized balls.
  7. Roll these balls in the powdered sugar until it is completely covered.
  8. Place the powdered sugar cookie dough balls onto a baking tray.
  9. Bake for 20 minutes at 350F.
  10. Remove and let cool on a wire rack. Then enjoy!

This brand of ube extract provides a really nice ube flavor and great deep purple color too!

This was such an awesome recipe to follow. Super easy and I ended up with very beautiful purple cookies! I found that 15 minutes for me was enough time for the cookies to bake. Crunchy on the outside but soft and chewy on the inside! So perfect!! I can’t wait to make these again!

This is one of my favorite recipes from the site. My family LOVES these ube crinkle cookies – I’ve made multiple batches! I reduced the sugar just because I don’t like things too sweet and also baked for 15 minutes, too. Great recipe!
