Homemade Pandan Boba

Homemade boba has recently started to take off as numerous boba shops across the country started to make this topping in house. Well, good news is, now you can too!


Making homemade boba is a really simple thing to make since it requires such few ingredients and you can flavor it however you want! TBH I’d definitely say making homemade boba is not as worth as going to a grocery store and buying prepackaged ones instead since it can take a while to really properly roll out each individual boba ball. BUT on the bright side you can easily roll them out while watching anime, kdramas, and youtube videos since it doesn’t take much concentration.

Often called the vanilla of SouthEast Asia, pandan is an herbaceous plant that serves as a base flavor for various sweets over there. Pandan leaves are incredibly fragrant and provide a bright green color to many desserts. It may be a bit hard to come by fresh pandan leaves in the US unless you have an Asian grocery store handy near you, but no worries because it’s relatively easy to buy pandan extract online (me and my mom’s favorite pandan extract brand can be found below)!

Ingredients

  • 1 cup water (for dough)
  • 4 cups water (for boiling boba)
  • 4 tablespoons white sugar
  • 0.5 cup tapioca starch
  • 1 teaspoon pandan extract (<- my mom's personal favorite brand, its so flavorful and bright green!)

Instructions

Pandan Boba

  1. First start of by boiling the water
  2. Put the tapioca starch and sugar into a separate, heat proof, bowl and mix together
  3. Right before pouring the water into the tapioca starch, pour the pandan extract into the water and stir until completely mixed together
  4. Make sure the water is BOILING HOT before pouring it into the tapioca starch
  5. Pour the water over the top of the starch a little at a time when starting out (about 5 tablespoons or so) and try to mix the water into the tapioca starch as much as possible (preferably with a chopstick) before pouring more
  6. Keep pouring the water into the starch and keep mixing until the dough starts to come together and begins to gain the texture of playdoh
  7. It's fine to keep adding in more water or more starch to gain the desired consistency as long as the resulting dough is neither too wet nor too dry feeling
  8. Flour a cutting board with some more tapioca starch and begin to roll out the dough into long strands
  9. Cut the dough and roll into tiny balls
  10. Boil 4 cups of water into a medium sized pot and only pour in the boba once the water is boiling
  11. Stir until the boba are floating and then leave to simmer over medium low heat for 20 minutes
  12. Remove the boba and serve as a topping anywhere desired!

(I'd normally recommend soaking the cooked boba in some sort of simple syrup but these boba already come flavored and sweetened since we made them ourselves :))
